5 /5 Roli Eats: Bronco’s Burgers is exactly what a proper smash burger should be. These things are thin, crispy, messy in the best way, and packed with flavor in every bite. They nail that golden edge-crisp that only a real smash burger delivers. Honestly, the definition of “smash burger” should just be a picture of Bronco’s.
And the sides? They’re just as impressive.
Their thick-cut fries shocked me — I’m usually not a thick-cut fry fan because they tend to come out soft or smushy. Not here. Bronco’s fries are fried to perfection: crispy on the outside, tender inside, and seriously addictive.
Their onion rings are also excellent. Light, crunchy, flavorful, and not soggy or heavy like so many places make them. It’s one of those spots where the burger is fantastic, but somehow the sides keep up.
Plus, the tacos, burritos, and cheese dip are all standouts. The chips that come with the dip are fresh and crunchy, and that combo is dangerous in the best way.
Inside looks small at first glance, but there’s an extra dining room in the back with more seating. Just know it can get busy — I’ve been there when it was chill, and I’ve also been there when it was packed to the point I had to sit outside. Parking in the front is tight, but there’s additional parking in the back (marked by a sign).
The staff is extremely friendly, and even though they only opened earlier this summer, they’ve already become one of my go-to mountain ride stops with the crew. Great food in the perfect location.
My only wish? A Coca-Cola fountain. They do have cans, so I always grab a Coke Zero to complete the meal, but a fountain machine would take things to another level.
Bronco’s is an easy recommendation. If you want a real smash burger — plus great fries and onion rings — this is the spot.
